THE ENERGY NUTRIENTS: CARBOHYDRATES – DIETARY FIBER
The indigestible portion of complex carbohydrates is a nonnutritive substance that cannot be broken down by the enzymes in the human body. Six of the seven types of dietary fiber are carbohydrate. Only lignin, found in fruit and vegetable skins and the woody portions of plants, is a noncar-bohydrate.
You should know information on fiber, including, water-soluble and -insoluble varieties, recommended daily intake, nutritional advantages of adequate amounts, dangers of excess intake, and the food sources for both types.
Blood-Glucose Control Blood-glucose levels are carefully regulated by the pancreas. When blood-sugar levels are too high, the pancreas releases a hormone called insulin, which promotes the movement of glucose into certain cells, dropping blood-sugar levels. When levels are too low, the pancreas secretes a hormone called glucagon, which stimulates the changing of stored liver glycogen into glucose and the conversion of noncarbohydrates into glucose to raise the blood-sugar level (see Figure 10.1). The pancreas of individuals suffering from Type I (insulin dependent) diabetes mellitus fails to produce insulin, so it must be injected to control blood-glucose levels. The pancreas of most individuals suffering from adult-onset, Type II (noninsulin dependent) diabetes mellitus produces insulin; glucose uptake at the cellular level, however, does not occur normally and blood-sugar levels remain high. For most individuals, the pancreas does its job and, in conjunction with proper diet, maintains blood glucose at normal levels regardless of what we eat and how much we exercise.
