PREVENTING ILLNESS AND DISEASE: THREATS TO WELLNESS - NUTRITION - ALL ABOUT FIBER

1.Water-insoluble (dietary fiber)
Cellulose, forming the cell walls of many plants, is the most abundant insoluble fiber. Cellulose and lignin (from the woody portion of plants, parts of fruit and vegetable skins, and whole grains) cannot be broken down, digested, or made to provide calories for the body.
2. Water-soluble
The fiber types that either dissolve or swell when placed in water. Dried beans and peas (8 grams per Vi cup), oat bran, tofu, and the flesh of fruits and vegetables are excellent sources of water-soluble fiber.
3. Daily needs of dietary fiber
25-35 grams. It is important to increase your daily intake slowly, if you are unaccustomed to adequate fiber, to avoid frequent bowel movements and diarrhea. Add several grams daily over a period of a few weeks to give your system a chance to adjust.
4.Nutritional advantages of consuming adequate fiber
Insoluble fiber increases transit time (digestion and elimination of food) and decreases the amount of time the bacteria in the food has to act on intestinal walls. It helps prevent colon and rectal cancer and diverticulosis (outpouchings in the wall of the large intestine), provides bulk to the stools, helps eliminate constipation, helps maintain normal bowel movement, and helps to control and maintain normal body weight and fat. Water-soluble fiber is associated with lower cardiovascular disease, lower blood cholesterol, lower blood pressure, and possible help in the prevention of diabetes and obesity.
5. Dangers of excess fiber
Excess dietary fiber binds to some trace minerals and causes excretion prior to the absorption of these minerals. Excessive fiber intake causes poor absorption of nutrients, interferes with the absorption of some drugs, reduces the ability to digest and absorb food by speeding up digestive time, and causes irritation of the intestinal wall. The high phosphorus content of high-fiber foods may create special problems for some individuals, such as those with kidney problems.
Foods rich in insoluble (dietary) fiber include apples, bananas, brown rice, cabbage, cauliflower, green beans and peas, legumes, nuts and seeds, pears, peaches, plums, tomatoes, wheat bran, and whole grain breads and cereals.
6. Food sources
Foods rich in soluble fiber include apples, bananas, barley, black-eyed peas, broccoli, carrots, citrus fruits, corn, green peas, legumes, oat bran, oatmeal, potatoes, prunes, seeds, and zucchini.
Many hot and cold cereals (unprocessed bran, 100 percent bran, shredded wheat, oatmeal) contain 2 to 5 g of fiber per serving. Legumes provide about 8 g per portion (1/2 cup of gar-banzo beans, kidney beans, or baked beans). Fruits provide about 2 g per serving (one small apple, banana, orange; two small plums, a medium peach, 1/2 cup strawberries, ten large cherries). Vegetables also provide about 2 g per serving (broccoli, brussels sprouts, two stalks of celery, small corn cob, lettuce, green beans, small potato, tomato), and 1 g of fiber is provided by ten peanuts, 1/2 cup walnuts, 21/2 teaspoons of peanut butter, and a pickle. Additional foods with fiber are breads (whole wheat, whole grain), crackers, and flours (wheat germ, wild rice, cornmeal, buckwheat, millet, rice, raisins, and popcorn). Cooking does not significantly reduce the fiber content of foods.
